Ingredients
  

For the muffins

  • 1 3/4 cups Cranberries fresh
  • 2 tbsp orange zest
  • 1 Egg
  • 1 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 2 cups Flour + 1 tablespoon for cranberries
  • 1 cup Granulated sugar
  • 1 tsp Salt
  • 3/4 cup Orange juice
  • 2 tbsp Butter

For the streusel topping

  • 1 ¼ cup flour
  • ½ cup light brown sugar tightly packed
  • cup sugar
  • ¼ teaspoon salt
  • 6 Tablespoons butter melted

For the glaze

  • 2 cups powdered sugar
  • 2 tablespoons Milk
  • 1 tablespoon orange zest

Instructions
 

  • Using your hands or a pastry blender, mix the softened butter with the dry ingredients.
  • Add egg and the orange juice and mix.
  • Toss the cranberries in a tablespoon of flour.
  • Fold the cranberries into the batter.
  • Scoop batter into a muffin liner 3/4 the way full.
  • In another mixing bowl, add the streusel dry ingredients and mix. Drizzle the melted butter over the mixture and using a fork, work the mix and the butter together until clumps form.
  • Sprinkle the streusel onto the top of the muffin batter.
  • Bake at 400°f for 20 minutes until muffins are fully cooked and a toothpick is dry when you insert it into the center of the muffin.
  • While the muffins are cooking, mix the powdered sugar, milk and orange zest.
  • Let muffins cool before drizzling with glaze.
