Who doesn’t love a peach Danish pastry treat every now and again? It is something that feels a little indulgent when bought in a bakery!

Ingredients
  

For the Danishes

  • 1 puff pastry sheet
  • 4-5 fresh peaches cut into 6 wedges each
  • 2 tbsp icing sugar
  • 1 tbsp all purpose flour
  • 1/4 tsp cinnamon powder
  • 1/2 tsp vanilla extract
  • brown sugar to sprinkle
  • crushed pecans
  • 1 egg beaten well

For the icing

  • 1/2 cup icing sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp milk

Instructions
 

  • Pre heat the oven at 400 F. Line a baking dish with baking paper and set aside.
  • Get your pastry and lightly roll it out then cut it into 9 equal pieces.
  • Grab your fresh peaches and cut them into 6 wedges each.
  • Combine flour, cinnamon and sugar and mix well.
  • Add vanilla extract and mix well.
  • Gently toss peach wedges with the flour sugar mix.
  • Equally divide the peaches and place them in the middle of each pastry piece.
  • Then sprinkle with the brown sugar and crushed pecans
  • Brush the edges of the pastry with the egg.
  • Place in a pre-heated oven for 15 minutes or until pastry is puffed up and golden
  • Make the vanilla icing by mixing sugar, vanilla extract and milk into a smooth icing
  • Leave the Danishes to cool and then drizzle them with the vanilla icing.
