Who doesn’t love a peach Danish pastry treat every now and again? It is something that feels a little indulgent when bought in a bakery!

For the Danishes
- 1 puff pastry sheet
- 4-5 fresh peaches cut into 6 wedges each
- 2 tbsp icing sugar
- 1 tbsp all purpose flour
- 1/4 tsp cinnamon powder
- 1/2 tsp vanilla extract
- brown sugar to sprinkle
- crushed pecans
- 1 egg beaten well
For the icing
- 1/2 cup icing sugar
- 1/2 tsp vanilla extract
- 1 tbsp milk
Pre heat the oven at 400 F. Line a baking dish with baking paper and set aside.
Get your pastry and lightly roll it out then cut it into 9 equal pieces.
Grab your fresh peaches and cut them into 6 wedges each.
Combine flour, cinnamon and sugar and mix well.
Add vanilla extract and mix well.
Gently toss peach wedges with the flour sugar mix.
Equally divide the peaches and place them in the middle of each pastry piece.
Then sprinkle with the brown sugar and crushed pecans
Brush the edges of the pastry with the egg.
Place in a pre-heated oven for 15 minutes or until pastry is puffed up and golden
Make the vanilla icing by mixing sugar, vanilla extract and milk into a smooth icing
Leave the Danishes to cool and then drizzle them with the vanilla icing.
