Ingredients
  

  • 4 large egg yolks
  • 1/4 cup granulated sugar
  • 2/3 cup heavy whipping cream
  • 1 1/2 cups milk
  • pinch of salt
  • 1/4 teaspoon ground nutmeg
  • 1 tsp cinnamon
  • 2 cloves
  • ¼ tsp dried orange zest
  • 1/8 teaspoon vanilla extract
  • ¼ tsp rum extract

Instructions
 

  • Mix egg yolks and sugar and whisk until light and creamy.
  • Add the rest of ingredients (except for the extracts) to a saucepan and cook on stove.
  • Bring to a light simmer.
  • Remove the saucepan from the stove and add vanilla and rum extract
  • Strain the hot mix through a fine sieve.
  • Temper the eggs by adding one or two spoonful's at a time of the hot mix, until all hot mixture is added to the egg mix.
  • Pour entire mixture back into the saucepan and cook, whisking continuously.
  • Bring to a light simmer, about 3 minutes.
  • Remove from the stove, pour into a pitcher.
  • Cover with heat resistant foil. Chill in the fridge overnight or for at least 1 hr before serving (or serve warm).
