- 4 large egg yolks
- 1/4 cup granulated sugar
- 2/3 cup heavy whipping cream
- 1 1/2 cups milk
- pinch of salt
- 1/4 teaspoon ground nutmeg
- 1 tsp cinnamon
- 2 cloves
- ¼ tsp dried orange zest
- 1/8 teaspoon vanilla extract
- ¼ tsp rum extract
Mix egg yolks and sugar and whisk until light and creamy.
Add the rest of ingredients (except for the extracts) to a saucepan and cook on stove.
Bring to a light simmer.
Remove the saucepan from the stove and add vanilla and rum extract
Strain the hot mix through a fine sieve.
Temper the eggs by adding one or two spoonful's at a time of the hot mix, until all hot mixture is added to the egg mix.
Pour entire mixture back into the saucepan and cook, whisking continuously.
Bring to a light simmer, about 3 minutes.
Remove from the stove, pour into a pitcher.
Cover with heat resistant foil. Chill in the fridge overnight or for at least 1 hr before serving (or serve warm).
