Apple pie is one of my favorite fall desserts! And while I love a good slice of pie, store bought pies aren’t the greatest. But who has the time and energy to make a pie from scratch? If you’re craving a piece of apple pie but don’t want a slice of store-bought pie, you’re in luck! I have a simple recipe for individual apple pies, that takes around 30 minutes to make. And you only need a few simple ingredients to put these apple pie cups together!

No apple pie would be complete without a nice, flaky crust. But with these mini apple pies in muffin tins, you won’t need to make your own pie crust from scratch. Frozen puff pastry is the perfect substitute for a flaky pie crust when you don’t have the time to make your own crust. And it’s perfect for creating mini apple pie cups because you can easily cut it into the size you need to fit inside a muffin pan!

Since you won’t be making your muffin tin apple pies from scratch, you’ll have a few extra minutes to whip up your own pie filling. While you could make this recipe super simple and use canned apple pie filling, once you try this easy recipe, you’ll never use the canned stuff again!
You won’t believe how easy it is to make your own apple pie filling! All you need are some fresh apples, water, sugar, spices, and cornstarch.
The most important part of this recipe is the apples you use to make your filling. And with so many varieties to choose from, it can be hard to know which type of apple to use in your apple pie cups.
What apples are best to use for these apple pie bites?
For my apple pie cups, I chose gala apples. These crisp red apples created a deliciously sweet pie filling that perfectly complemented the flakey puff pastry crust. Here are a few other apple varieties that work well for homemade apple pie filling:

To peel apples easier for this recipe, I like to use my vegetable peeler. I keep the apples in my hand with a good grip and peel the skin away from the top to stem in circles.
This is a messy job, but my kids enjoy seeing the apple skin peel off! You can then keep your peeled apples in a bowl of water with some fresh lemon juice added to it. The acidity in the lemon juice will prevent browning and they’ll last for days in the refrigerator. The you can use the apple peels to make a delicious apple cider or infused water.

Yes! Before you slice your apples, make sure to core them. This is to remove the seeds and the parts that won’t soften while cooking the apples.
How do you core apples for apple pie?
For this recipe, I choose to core the apples before peeling them. This is a personal preference and you have many options when it comes to cored apples for your homemade apple pie filling.
You can use a small pairing knife or an apple corer to remove the center of your peeled apples. The best part about using either of these tools is that they’re small and inexpensive.
How should you cut apples for a pie?
Next, you’ll want to cut your apples into small cubes that are ½ inch in size. This will make sure they cook through and become tender while baking with the puff pastry crusts.
You can cut the apples with a knife, it works great for this task. I find it easier to slice the apples first and then cut the slices into cubes.

Yes, these apple pie bites can be stored in the refrigerator for up to three days. They are best eaten when they are still warm and fresh out of the oven though. You can reheat them in the microwave or warm them up in a low temperature oven.
Another option is to freeze these apple pie bites. You can simply store them on a baking sheet in your freezer for about an hour and then transfer them to the freezer safe bag. These mini apple pies will keep well in your freezer for three months!
Do you need puff pastry for apple pie bites?
You don’t need to use puff pastry, but it’s a great way to add an extra crunchy bite and decadent flavor. The best part about this recipe is how easy it is. It will take you no more than 30 minutes from start to finish!
What else can I use instead of puff pastry?
You can use any kind of pie crust recipe you love with the same measurements. Or you can use cinnamon roll crust if you want to make your cups real fancy and turn them into cinnamon roll apple pie cups.
How do you assemble apple pie bites?
To assemble the mini apple pies, you first need to unfold your sheet of puff pastry on a floured cutting board. Then cut each piece of puff pastry into equal sized squares using a pastry wheel or sharp knife.
Next, place each square inside a muffin cup and press into the cup. Bake the pastry cups for 10 minutes. When the pastry begins to brown, remove from oven and allow to rest for five minutes.
Fill your puff pastry squares with apple filling and then bake for 5-10 minutes.
What do I need for apple pie bites?
The ingredients listed below make 18 pie cups, ready in 35 minutes. I used puff pastry, thawed first. I peeled, cored and cubed the apples and sprinkled with lemon juice. 6 apples, peeled, cored and cubed.
Other ingredients used in this recipe are brown sugar, cornstarch, cinnamon, allspice, ginger, nutmeg and salt. I didn’t use butter for my filling as the pastry is buttery enough but feel free to add some.
How to make apple pie cups?
Preheat oven to 350 degrees. Prepare a muffin tin by greased with nonstick cooking spray. Puff pastry needs to be cut into nine equal squares.
Each square will be placed inside a muffin cup.
Bake the pastry cups for half the time then remove from oven and allow to rest for five minutes.
While the pastry is baking, make the apple pie filling. and cook it on the stove on medium heat.
Use a spoon to press down the center of each pastry cup, then fill the cup with the apple mixture. Top the apples with chopped pecans.
Place the pies back in the oven and bake for 5 to 10 more minutes, or until the pastry is golden brown.
Allow pies to cool for five to 10 minutes in the pan, then remove to wire rack to cool completely before serving. You can also serve these hot but taste better warm or cold. You can drizzle some sugar frosting or caramel sauce just before serving. Also vanilla ice cream works great with these apple cups!

Ingredients
- 1 package puff pastry thawed
- 6 apples peeled cored and cubed
- The juice of one lemon
- ¼ cup water
- ⅔ cup brown sugar
- 2 tablespoons cornstarch
- 2 teaspoons ground cinnamon
- ½ teaspoon allspice
- ¼ teaspoon ginger
- ¼ teaspoon nutmeg
- ¼ teaspoon salt
Instructions
