What kind of cookies are watermelon cookies?
Watermelon cookies are sugar cookies that are made with a decorated like watermelon for a fun, summery treat. The cookies are usually circular or oval in shape and decorated with green frosting around the edges for a watermelon rind, pink or red food coloring for the center, and black food coloring to mimic the watermelon’s seeds. These cookies are perfect for any summer gathering and can even be made into other cute shapes like hearts or stars!
What kind of frosting is best for watermelon cookies?
I used Royal icing but buttercream or cream cheese frosting work perfectly for these summery treats! Add a few drops of pink, red, and green food coloring for the perfect watermelon hue.
How long will the cookies last?
Watermelon slice cookies should be stored in an airtight container and will remain fresh for up to two days at room temperature and four days in the refrigerator. For longer storage, you can freeze the cookies in an airtight container for up to two months. Decorate them with Royal icing after they’re thawed completely, before serving.
Can I use a cookie cutter for these cookies?
Yes, you can definitely use a cookie cutter to cut out the shapes of your watermelon cookies. Just make sure that the cookie dough is chilled before rolling it out and cutting the shapes.
Are watermelon cookies suitable for vegans?
Yes, these cookies can be made vegan-friendly by using vegan butter or margarine instead of regular butter. Additionally, you can use a dairy-free or vegan cream cheese frosting to make the recipe completely vegan.
Can I make watermelon cookies without frosting?
Yes, these cookies can be enjoyed without frosting as well. If you don’t want to use any frosting, add some extra sugar and cinnamon to the cookie dough for a sweeter, spicier taste. You can also sprinkle colorful sugar on top of the unbaked cookies before baking them for an extra special touch.
What other flavor combinations can I use to make watermelon cookies?
You can try adding some lemon zest or juice to the cookie dough for a more subtle citrus flavor, or switch it up by using strawberry frosting instead of watermelon.
Adding crushed nuts or dried fruit to the dough is also a great way to give the cookies an extra boost of flavor.

To make the cookies
- In the mixing bowl of a stand mixer, add the butter, sugar, and egg, and blend with the whisk attachment until smooth, and creamy.

- Add the flour mixture to the mixing bowl, and mix until blended, and smooth.
- Place a large piece of parchment paper on the kitchen counter, and sprinkle with flour. Place half of the cookie dough on the parchment paper, and with a floured rolling pin, roll the dough to 1/2 inch thickness. Using a 3 inch round cookie cutter, cut out a circle, and then cut the circle in half, making 2 watermelon slices/cookies.
- Place on a parchment paper lined baking sheet. Bake at 350 degrees for 10 to 12 minutes, or until cookies being to turn golden brown around the edges. Remove from oven to a wire rack, and cool completely.
To make the ROYAL ICING
- In the mixing bowl of a stand mixer, place the warm water, meringue powder, and Karo syrup, and blend with the whisk attachment until completely blended and smooth.
- Add the powdered sugar, about 2 cups at a time, and mix on low, until all the powdered sugar has been added. Scrape down the sides of the mixing bowl as needed, and blend until the Icing is smooth and creamy.

In another bowl, add several drops of Lime Green Food Coloring Gel. In the next bowl, add a few drops of the Dark Green Food Coloring Gel, and in the last bowl, add a few drops of the Black Food Coloring Gel.
- Place the icing in 4 plastic pastry bags, and snip off the very end of the bags.
- To start decorating, pipe the Lime Green Frosting in two lines, on the rounded side of the cookie, one on the outside, and one right at the pink color, leaving just enough room to pipe a thin strip of the Dark Green Icing between the Lime Green piping.
- Fill in the cookies with the watermelon colored icing.
- Pipe small dots of the Black Icing all around the rounded side of the cookie, and using a cookie scribe pull the black icing down on the body of the cookie, which will resemble Watermelon Seeds.
