Ingredients
  

For the cupcakes

  • 1 cup flour
  • ½ cup sugar
  • ¼ cup brown sugar
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup milk
  • ¼ cup butter melted
  • 1 teaspoon peppermint extract

For the frosting

  • 1 cup butter softened
  • 3 cups powdered sugar
  • ½ cup cocoa powder
  • 3 tablespoon milk
  • 1 teaspoon peppermint extract

Instructions
 

  • Preheat the oven to 350 degrees. Place liners in a muffin pan. Set aside.
  • In a medium mixing bowl, combine flour, sugar, brown sugar, cocoa powder, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, beat eggs. Add milk, butter and peppermint extract.
  • Mix dry ingredients slowly into the wet ingredients until just incorporated.
  • Fill each muffin cup ½ to ¾ way and bake for 18-22 minutes.
  • In a medium mixing bowl, cream butter until smooth. Add in milk and peppermint extract.
  • Beat in powdered sugar and cocoa powder until lumps are gone.
  • Allow cupcakes to cool then spread frosting on with a knife or use a piping bag.
