Ingredients
  

For the muffins

  • 2 cups flour
  • ½ teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ cup brown sugar
  • 1 egg
  • ½ cup milk
  • ½ cup molasses
  • ¼ cup butter melted

For the streusel

  • ½ cup brown sugar
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ cup butter melted
  • ½ cup flour

Instructions
 

  • Preheat the oven to 425 degrees. Place liners in a muffin pan or grease with cooking spray. Set aside.
  • In a large mixing bowl, combine flour, salt, baking powder, baking soda, cinnamon, ginger and brown sugar. Set aside.
  • In a medium mixing bowl, mix together eggs, milk and butter. Add in molasses.
  • Mix wet ingredients slowly into the dry ingredients until just incorporated. Set aside.
  • In a small bowl combine brown sugar, cinnamon, ginger and flour for the streusel. Add butter and mix until crumbly.
  • Use a spoon or cookie scoop to fill each muffin cup with batter, ¾ of the way. Sprinkle streusel over the tops.
  • Bake in the oven at 425 degrees for 8 minutes. Then reduce the heat to 350 and bake for another 12-15 minutes.
