For the muffins

For the streusel

Instructions
Preheat the oven to 425 degrees. Place liners in a muffin pan or grease with cooking spray. Set aside.
In a large mixing bowl, combine flour, salt, baking powder, baking soda, cinnamon, ginger and brown sugar. Set aside.
In a medium mixing bowl, mix together eggs, milk and butter. Add in molasses.
Mix wet ingredients slowly into the dry ingredients until just incorporated. Set aside.
In a small bowl combine brown sugar, cinnamon, ginger and flour for the streusel. Add butter and mix until crumbly.
Use a spoon or cookie scoop to fill each muffin cup with batter, ¾ of the way. Sprinkle streusel over the tops.
Bake in the oven at 425 degrees for 8 minutes. Then reduce the heat to 350 and bake for another 12-15 minutes.
