Preheat oven to 350°F or 180°c. Line a 12 hole muffin tray with paper liners, or spray with a non-stick cooking spray. Set aside.
Add the flour, brown sugar and ground cinnamon to a large mixing bowl. Stir until well combined and set aside.
To another mixing bowl add the milk, oil and egg. Mix until well combined.
Pour the wet mixture into the bowl with the dry ingredients. Mix until just combined.
Fold through the chopped apple.
Divide the muffin batter between the muffin tray. Bake for 20 minutes, or until cooked through.
Allow to cool in tin for 10 minutes before transferring to a cooling rack to cool completely.
Notes
White sugar can be used in place of the brown sugar.Any mild flavored oil can be used in place of the canola oil.Butter can be used instead of oil. Use 1/2 cup melted butter and omit the oil.Be sure not to over mix the batter. Mixing until only just combined will help keep the muffins light and fluffy.The muffins are cooked through when an inserted skewer or toothpick comes out clean.These muffins can be enjoyed warm or at room temperature.
